I wouldn't put anything behind closed doors. You will probably collect more stuff because your garage will look so empty.

I don't have my garage yet, but I know what I am going to do when I get. I'm shopping for a townhouse now. I'll custom build everything. My workbench is going to have 2 shelves. The top one will have a 6" lip on the front for clamping stuff too. The bottom shelf will be high enough so I can clean underneath. In the corners I am going to build up to the ceiling with shelves to set stuff on. I'll probably paint everything Ford blue.

I just got some nice wood shelving from Home Depot when I did mine....It cost a bunch but it looks great.....BTW overhead storage racks FTW!

I've just got the rails for adjustable shelving all along one wall. Then I've got a big heavy plywood 2' deep shelf over on the other side for long term storage of crap above where I used to store the car winters.
